Farmers’ Market Weekly: Strawberry Shortcake
Visit the Santana Row Farmers’ Market every Sunday with new, extended hours from 11 a.m. – 4 p.m. Pick up some conventional or organic strawberries to make your own strawberry shortcake, a perfect Summer dessert! Quick and easy recipe below!
Ingredients:
Shortcakes are the sweet sister to biscuits, and they make an awesome dessert when topped and filled with strawberries and whipped cream.
2-1/3 cups prepared baking mix, such as Bisquick
1/2 cup milk
3 tablespoons sugar
3 tablespoons butter, melted
Sweetened sliced strawberries*
Whipped topping
Directions:
Heat oven to 425°F. Stir baking mix, milk, sugar and butter until soft dough forms. Drop by 6 spoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown.
Split shortcakes, fill and top with sweetened strawberries and whipped topping
(see photo).

Makes 6 servings.
*Adding a bit of sugar to fresh fruit is called macerating it. The sugar draws out the fruit’s natural juices as well as giving it a little added sweetness.
Mix it Up! Various types of berries can be used to mix with the strawberries, such as blueberries, or blackberries. Create your own combination of fresh fruits!
