Fashionably Early Dining:  Straits “Seafood Green Curry” recipe

Seafood Green Curry
Shrimp, Fish, Clams, Mussels, Jalapeno Coconut Curry

Seafood Green Curry

Ingredients:

4 Each - P.E.I. Mussels

4 Each - Manila Clams

4 Each - 16-20 Prawns, P&D

2 Ounces - Salmon, cubed

2 Ounces - Seabass, cubed

2 Tablespoons Red Fresno Peppers, sliced

1 Cup - Chicken Stock

12 Ounces - Green Curry

1 Piece - Choy Sum, blanced

2 Sprigs - Cilantro


Method:

1.  In a sauté pan, and the mussels, clams, prawns, abalone, salmon, Seabass, peppers and chicken stock. Cook until the mussels and clams start to open.

2.  Add the green curry to the pan and bring to a boil while stirring occasionally.

3.  Plate the green curry in a large boat.

4.  Place the Choy Sum in a hot water bath and drain. Place the Choy Sum on top of the green curry.

5.  Garnish the dish with the cilantro.
