Produce Pick of the Month: Spring Peas

“How luscious lies the pea within the pod.” Emily Dickinson

Spring peas are arriving at your farmers’ market.  California is the leading producer of garden, or English peas.

Peas

A member of the legume family, peas are a great source of protein and vitamin C, low in fat, and high in fiber.

For green peas, the closer you are to the time of picking, the better they taste. Check the pea pods. They should be firm, crisp and bright green with a fresh appearance and a velvety touch. Tough, thick-skinned pods are an indication of overly mature peas.

Your peas will taste fresher if you shell them yourself and cook immediately. Avoid buying peas that are already shelled.  One pound of peas in the pod will yield about one cup of shelled peas.

Try Peas and Onions in Lemony Rice for a fresh side dish or make some Spring Pea Soup to go with a sandwich or salad. You’ll find more great spring recipes on our website and at the market Information Booth.
